Red Wine TOCS
Basic Information
To begin with, the varieties of this red wine TOCS include 52% Grenache, 28% Syrah, and 20% Carignan. This combination of varieties offers a unique complexity to the wine. Grenache adds intense fruity notes, Syrah provides firm structure, and Carignan adds a touch of elegance.
Winemaking
Each variety is elaborated separately. As for fermentation, 25% takes place in 500-liter open barrels, with the rest in stainless steel tanks. Daily pigeage and gentle remontage are performed.
Aging in Barrel
14-18 months, depending on the variety, in lightly toasted French oak barrels from Allier. New 300-liter barrels are used, with the rest in 225-liter second-year barrels.
Alcohol: 15% by volume.
Filtration or Clarification: No filtration or clarification processes are applied. Therefore, small amounts of sediment may appear over time.
